One of the most inspiring locations we visited while in Costa Rica was a coffee plantation and inn called Finca Rosa Blanca, which is about a 20 minute drive from the San Jose airport. The owner, Glenn Jampol, is an artist whose paintings help adorn the main house. This impressive white building is a work of art itself, with undulating lines, lovely murals, and a view to die for.

This small hideaway decorated with local art and enormous fig trees serves up local produce--as in from 50 feet from the kitchens--cooked up with a pan-Latino flavor. One night salad came with chayote, leeks, mixed greens, and a passion fruit vinaigrette, followed by grilled shrimp marinated in ginger and garlic and served with caramelized pineapple and patacones, or green plantain fritters. Cold mango and coconut milk soup was a delicious and refreshing way to end the meal--that and a delicious cup of rich Costa Rican coffee.

Costa Rica was very early into the eco-tourism game recognizing that their natural resources could be translated into tourist dollars. Over 27% of Costa Rica is designated as national park, biological reserve, wildlife refuge or other category of protected areas. No other country in the world even comes close to this. After a twenty minute drive through a fairly busy and populated area we arrived at a sublime, tranquil place that seemed worlds away from the bustle of Costa Rica’s capital city. The goal here is to exist in harmony with nature... to use and reuse where possible, to conserve and to save, to waste nothing. It sounds frugal doesn’t it? But nothing seems frugal at Finca Rosa Blanca.

A good intro to the country is Teri and Glenn Jampol's Central Valley homage to Antoni Gaudí. Once ensconced in their eccentrically luxurious seven-room, two-villafinca, you won't believe it's a mere 15-minute drive to San José airport. There's barely a right angle in the undulating, whitewashed interiors, handcrafted by artist-builder Glenn-it's all carved wood, murals, archways, Jacuzzi baths masquerading as jungle pools, antiques, patios, and beamed ceilings. Though this is a B&B (excellent breakfast with coffee from the surrounding plantations is included in the rates), nobody skips chef Pedro Alas' amazing guests-only four-course dinners, featuring organic produce and herbs from the lush and fertile grounds-in fact, people have been known to check in specifically to dine.
